This easy chocolate chip cheesecake is baked in a graham cracker pie crust. This is an excellent size cheesecake for most families.
Use 1 cup of regular semisweet chocolate chips or about 3/4 cup of mini chocolate chips in this recipe.
- 11 or 12 oz. cream cheese*
- 1/2 cup confectioner's sugar
- 3 large eggs
- 1 teaspoon vanilla
- 1 cup semisweet chocolate chips (I used 3/4 cup mini chocolate chips)
- 1 graham cracker pie crust, purchased or homemade
350° F (180° C/Gas Mark 4) .
Combine cream cheese and confectioner's sugar in a large bowl. Beat with mixer on medium speed until light and fluffy. Beat in eggs, one at a time, mixing well after each one. Beat in vanilla. Add chocolate chips to the mixture and stir in with a wooden spoon. Pour mixture into pie crust. Bake about 25 to 35 minutes, or until set.
Let cool before cutting.
Optional: add a drizzle of chocolate syrup or homemade chocolate sauce on the top.
*Either an 8-ounce package plus a 3-ounce package or 1 1/2 8-ounce packages.
