Top these delicious little single-serve cheesecakes with fresh fruit, lemon curd, cherry pie filling, or preserves.

Yield: Makes 1 Dozen
- 2 (8oz.) pkgs. softened cream cheese
- 3/4 cup sugar
- 2 eggs
- 1 tbs. lemon juice
- 1 tsp. vanilla
- Vanilla wafers
- cherry pie filling, fruit topping or preserves
Heat the oven to 350° F (180° C/Gas Mark 4) .
Beat together cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
Line muffin tins with cupcake papers. Place a vanilla wafer in bottom of each. Fill about 2/3 full with cheese mixture. Bake for 20-25 minutes or until just set.
Let the cheesecakes cool in pans, then remove and top with cherry pie filling or filling of your choice. I make lemon topping or sometimes use various preserves.
Chill and serve.
This makes 12-14 depending on the size of your muffin tins. Enjoy!
