Mini Cheesecakes Recipe

  • 2 (8oz.) pkgs. softened cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbs. lemon juice
  • 1 tsp. vanilla
  • Vanilla wafers
  • cherry pie filling, fruit topping or preserves


Beat together cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.

Line muffin tins with cupcake papers. Place a vanilla wafer in bottom of each. Fill about 2/3 full with cheese mixture. Bake @ 350 for 20-25 minutes or until just set. Let cool in pans, then remove and top with cherry pie filling or filling of your choice. I make lemon topping or sometimes use various preserves. Chill and serve. This makes 12-14 depending on the size of your muffin tins. Enjoy!

So easy and so good, Member TeresaSimpson

One of my coworkers makes these cheesecakes for every potluck at work. She tops them with a dollop of chocolate made from chocolate chips and heavy whipping cream. They are to die for. When she finally (after much pleading) shared the recipe with us, we were all amazed at how easy they were to make.
