Cheese and Beef Log

Ingredients:

  • 2 cups shredded sharp Cheddar cheese, room temperature
  • 3 ounces cream cheese with chives, room temperature
  • 1/4 cup dry white wine
  • 1 teaspoon prepared horseradish
  • 1/2 cup chopped dried beef

Preparation:

In mixing bowl combine Cheddar and cream cheese, wine, and horseradish. Beat with a hand-held electric mixer until well blended. Cover; chill for 2 hours. Shape cheese mixture into a log about 1 1/2 to 2 inches in diameter. Roll log in the finely chopped beef. Wrap log in clear plastic wrap; refrigerate until serving time. Serve with assorted crackers. Store dried beef cheese log or ball tightly covered in the refrigerator.
