Cherry Crisp

Cook Time: 25 minutes

Ingredients:

  • 1 can (16 ounces) pitted tart red cherries in juice
  • 1 teaspoon lemon juice
  • red food coloring
  • 1/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups vanilla wafer cookie crumbs
  • 1/3 cup melted butter

Preparation:

Drain cherries, reserving 2 tablespoons of the liquid. Mix the cherries with reserved liquid, lemon juice, and a few drops of red food coloring. Pour fruit mixture into an 8-inch square baking dish. Mix sugar and cinnamon and sprinkle over cherries. Mix cookie crumbs with butter; sprinkle over cherries and pat down slightly. Bake at 400° for 25 minutes. Serve warm with whipped topping.
Serves 4 to 6.
