Coconut Chess Pie

This coconut chess pie is a simple preparation. All you need is a pie shell, coconut, and a few pantry ingredients.


  • 1 stick butter (4 ounces)
  • 1 1/2 cups granulated sugar
  • 3 eggs, beaten
  • 1 cup flaked coconut
  • 2 teaspoons vinegar
  • 1 1/2 teaspoons vanilla


Combine butter and sugar in saucepan; heat, stirring, until melted and well blended. Combine all ingredients and mix. Pour into an unbaked pie shell. Bake for about 1 hour at 350°, or until a knife inserted in center comes out clean.

The pie was easy to make and turned out very good! I will make this one again. It held together well - wasn't 'runny'.
