Ingredients:
- 3 tablespoons butter
- 4 ounces sliced mushrooms
- 2 cups cubed cooked chicken
- 3 tablespoons flour
- 1 1/2 cups chicken stock
- pinch nutmeg
- salt and pepper, to taste
- 1 egg yolk, beaten
- 2 tablespoons light cream or half-and-half
- 2 to 3 teaspoons sherry, optional
Preparation:
In a medium saucepan over medium heat, saute the mushrooms in butter until browned. Blend in the flour until smooth and bubbly. Stir in the chicken stock and chicken. Simmer, stirring, for 8 minutes. Add nutmeg and salt and pepper, to taste.

Whisk together the egg yolk and cream. Add about 1/3 cup of the sauce mixture to the egg mixture, then add back to the saucepan. Stir until hot and bubbly. Add sherry, if desired.
