Ingredients:
- 3 tablespoons butter
- 8 ounces fresh sliced mushrooms
- 2 tablespoons finely chopped green bell pepper
- 2 tablespoons finely chopped red bell pepper
- 1/4 cup chopped green onion
- 4 tablespoons flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 3/4 cups half-and-half
- 2 cups chicken broth
- 3 cups cooked diced chicken
Preparation:
Melt butter in a large saucepan. Add mushrooms, green and red pepper, and green onion; cook for 5 minutes, until tender. Blend in flour, salt, and pepper.
Gradually add half-and-half and the chicken broth, stirring constantly. Continue cooking over low to medium-low heat, stirring constantly, until mixture is hot and thickened. Cook for about 1 minute; add chicken and heat through. Serve over toast, in pastry shells, or with rice. Creamed Chicken recipe serves 8.

"I used this recipe as a guide as I didn't have all the ingredients suggested. It was delicious, fast and easy to make. I used leftover roast chicken -- and the stock was the pan drippings with the fat skimmed off. I used skim milk instead of the half and half -- I'm sure the mixture would have been thicker had I used half and half or cream. But it tasted great anyway. I also didn't have mushrooms -- or green onions! So I used a regular onion and the red pepper. Sprinkled some parmesan cheese on top when it was plated. I'd make it again -- mushrooms would have made it taste a little richer, I imagine. Good 'combat' food as my husband calls such dishes!"
