Light Jamaican Style Chicken Recipe


Enjoy this flavorful chicken with roasted potatoes or rice for a tasty everyday meal.


  • 4 chicken breast halves
  • 1/3 cup corn flake crumbs or fine dry bread crumbs
  • salt and pepper
  • 12 ounces tomato juice or vegetable juice
  • 1 bunch (about 8) green onions, chopped
  • 1 teaspoon ground allspice
  • pinch cinnamon
  • 1/4 teaspoon ground thyme
  • 1/8 to 1/4 teaspoon ground cayenne pepper


Moisten chicken with water. In a large food storage bag, combine crumbs, salt, and pepper. Add chicken breasts, 1 or 2 at a time, and shake to coat. Place chicken in a baking pan that has been sprayed with cooking spray, skin side down. Place pan in a 450° oven. Bake chicken for 15 minutes; turn chicken skin side up and bake another 15 to 20 minutes, or until skin is golden and crispy. Drain and discard fat.

Combine juice with remaining ingredients; pour over chicken. Lower oven temperature to 350° F. Bake, basting frequently, until chicken is tender and sauce is thick. Add a little water if sauce cooks down too much.
Serves 4.
