Tropical Chicken Breasts

This chicken breast dish is bursting with tropical flavors, and it makes a wonderful meal along with hot cooked rice.

Total Time: 1 hour, 10 minutes


  • 4 to 6 chicken breast halves
  • salt and pepper
  • 2 tablespoons vegetable oil
  • 1 small can (6 ounces) frozen orange juice concentrate, thawed
  • 1/4 cup melted butter
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon soy sauce
  • pineapple slices
  • hot cooked rice


Directions for tropical flavored chicken breasts
Season chicken with salt and pepper. Place oil in a shallow baking pan; add chicken breast halves and bake at 350° for 30 minutes. Combine orange juice concentrate, butter, ginger, and soy sauce; simmer for 4 minutes. Baste chicken with sauce; bake 35 minutes longer, basting several times with sauce. Place chicken under broiler for a few minutes, just until browned. Garnish with pineapple slices and serve with remaining sauce over hot cooked rice. Chicken breasts recipe serves 4 to 6.

Absolutely delicious!! I used Jasmine rice and poured the extra juices from the pan as the chicken was baking throughout the 1 hour cooking time into the rice. It added more favor. With the pineapple on top of the chicken placed on top of the rice, it was one of the best meals we have had in a long time.
