Easy Skillet Chicken With Mushrooms

This chicken recipe is quick and easy, and it's wonderful with hot cooked rice or noodles. Chicken breast halves are pounded thin then quickly cooked in butter with garlic, vinaigrette, herbs, and mushrooms.

Yield: Serves 4.


  • 4 boneless chicken breast halves, pounded to 1/4-inch thickness
  • salt and pepper
  • flour
  • 2 tablespoons butter
  • 2 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/3 cup chicken broth
  • 2 teaspoons vinegar
  • 1/4 teaspoon dried parsley flakes
  • 1/4 teaspoon dried tarragon
  • 1 cup sliced mushrooms


Sprinkle the flattened chicken breasts with salt and pepper and lightly dust with flour.

In a large skillet over medium heat, melt butter with olive oil. Cook chicken with garlic until lightly browned, about 3 minutes on each side. Add remaining ingredients; cover and simmer for 5 to 10 minutes, until the chicken is tender and cooked through. Serve chicken with the sauce.

Serves 4.

This is a easy, quick recipe with ingrediants that most people have around the kitchen. My sauce was a little thin but overall the taste was good. Will definitely have this recipe again. Pairs great with long grain wild rice or angel hair pasta.
