Vinaigrette Chicken with Mushrooms

Chicken breast halves are pounded thin then quickly cooked in butter with garlic, vinaigrette, herbs, and mushrooms.

Cook Time: 15 minutes

Ingredients:

  • 4 boneless chicken breast halves, pounded to 1/4-inch thickness
  • salt and pepper
  • flour
  • 2 tablespoons butter
  • 2 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/3 cup chicken broth
  • 2 teaspoons vinegar
  • 1/4 teaspoon dried parsley flakes
  • 1/4 teaspoon dried tarragon
  • 1 cup sliced mushrooms
