Spiced Citrus Chicken

A variety of spices and citrus juices flavor these easy chicken breasts. This recipe is a great choice when you want a fresh and easy recipe for chicken, and it won't keep you in the kitchen.


  • 4 chicken breast halves
  • juice of 2 oranges
  • juice of 1 lemon
  • juice of 1 lime
  • 2 tablespoons sherry or white wine vinegar
  • 3 tablespoons honey
  • dash ginger
  • dash nutmeg
  • 1/2 teaspoon dried leaf basil, crumbled, or 1 1/2 teaspoons fresh chopped basil
  • 1/2 teaspoon garlic powder
  • 2 teaspoons cornstarch
  • 1/4 cup flour
  • 1 teaspoon Creole seasoning or seasoned salt
  • olive oil or cooking spray
  • sliced green onions


Put chicken breast halves between sheets of plastic wrap and gently flatten to an even thickness. They should be between 1/4 and 1/2-inch thick. Combine orange, lemon, and lime juice, vinegar, honey, spices, basil, and garlic powder; stir in cornstarch until dissolved then set aside.

Spray a large skillet with nonstick cooking spray or coat with olive oil; place the skillet over medium heat. Combine flour with seasonings; coat chicken pieces thoroughly. Saute chicken for 3 minutes on each side. Add juice mixture to the skillet and reduce heat to low. Simmer for 5 minutes, until chicken is tender and cooked through. Sprinkle each serving with sliced green onions.
Serves 4.
