Oven Fried Chicken Breasts

This oven fried chicken recipe uses a coating of stuffing crumbs.

Ingredients:

  • 8 ounces herb-seasoned stuffing cubes
  • 8 boneless chicken breasts halves, skin removed
  • 4 ounces melted butter

Preparation:

Put stuffing cubes or crumbs in a bag and crush until crumbs are fine. Dip chicken breasts in melted butter, then roll in crumbs. Place on foil-lined cookie sheet, at least 1 inch apart. Bake at 350° for 45 minutes to 1 hour, depending on size of the chicken breasts, or until golden brown. Juices should run clear when pierced with a fork.

"I liked this recipe. I kind of altered it a bit. I flipped the chicken breasts halfway through baking and sprinkled them with a little all seasoning. Really good. I also served them with a side of fried rice. A very good dinner when you come home from a hard day's work, from my husband's point of view. I only have one problem. The chicken was a little dry. I am wondering if that was my fault or if there were something I could do to fix that. But all in all, I thought it was a good recipe and the bread crumbs gave it a crunchy texture which I really enjoyed."
