Fruited Baked Chicken Breasts


In this recipe, chicken breasts are cooked with spices and a mixture of fruit and juices.


  • 6 chicken breast halves
  • 1 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon dried rosemary, crushed
  • 1 cup orange marmalade
  • 1/4 cup apple juice
  • 1/4 cup orange juice
  • 8 ounces dried apricots, coarsely chopped
  • 1/4 cup brown sugar, packed


Place chicken in lightly greased casserole. Combine ginger, salt, pepper, and rosemary; sprinkle over chicken. In a small saucepan, combine marmalade with orange juice and apple juice. Heat over low heat until marmalade is melted. Pour over chicken; bake uncovered at 375 degrees for 20 minutes. Remove from oven. Sprinkle with chopped apricots and brown sugar. Return to the oven and bake an additional 35 to 45 minutes, or until chicken is tender and golden.
Serves 6.
