Ingredients:
- 4 boneless chicken breast halves or about 1 pound thinly sliced boneless chicken breasts
- Salt and pepper
- 3 tablespoons flour
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 red bell pepper, very thinly sliced, optional
- 1 tablespoon lemon juice
- 3 cloves garlic, finely minced
- 4 green onions, with about 3 inches of green, thinly sliced
- 1 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper, to taste
Preparation:
Heat the oil and 2 tablespoons of butter in a large skillet over medium-low heat; add the chicken and brown for about 2 to 3 minutes on each side. Add the bell pepper, lemon juice, garlic, green onions, and chicken broth; bring to a simmer. Cover and simmer over low heat for 15 minutes, or until chicken is cooked through. Add the cream and salt and pepper, to taste. Serve with hot cooked angel hair pasta.
