Ingredients:
- 4 chicken breast halves
- Salt and pepper
- 2 tablespoons flour
- 2 tablespoons olive oil
- 1/2 cup pineapple preserves
- 2 tablespoons balsamic vinegar
- 1 cup chicken broth
- 4 green onions, thinly sliced
Preparation:
Sprinkle the chicken lightly with salt and pepper then coat with flour.
Heat oil in a large skillet over medium-high heat.
Brown chicken for about 2 minutes on each side.
Combine the remaining ingredients; pour over the chicken and bring to a boil. Simmer uncovered for 5 minutes. Cover, reduce heat to low, and simmer for 15 minutes, or until chicken is cooked through.
Serves 4.
