Glazed Chicken Breasts With Balsamic Vinegar and Pineapple Preserves

Balsamic vinegar and pineapple preserves flavor these easy and great tasting chicken breasts.

Cook Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 4 chicken breast halves
  • Salt and pepper
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1/2 cup pineapple preserves
  • 2 tablespoons balsamic vinegar
  • 1 cup chicken broth
  • 4 green onions, thinly sliced

Preparation:

Put the chicken breasts between sheets of plastic wrap and gently pound to thin evenly.

Sprinkle the chicken lightly with salt and pepper then coat with flour.

Heat oil in a large skillet over medium-high heat.

Brown chicken for about 2 minutes on each side.

Combine the remaining ingredients; pour over the chicken and bring to a boil. Simmer uncovered for 5 minutes. Cover, reduce heat to low, and simmer for 15 minutes, or until chicken is cooked through.
Serves 4.
