Quick and Easy Garlic Oven-Fried Chicken

Garlic adds flavor to these crispy oven fried chicken strips. Use part panko crumbs in this recipe for the crispiest chicken strips.

Ingredients:

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 4 to 6 boneless chicken breast halves, cut in strips
  • 2/3 cup fine dry bread crumbs (part panko if possible)
  • 1/3 cup fresh shredded Parmesan cheese
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoon dried leaf basil
  • 1/2 teaspoon salt
  • Dash pepper

Preparation:

Heat oven to 375°.

Line a pan with foil and lightly grease or spray with nonstick cooking spray. In a small skillet over medium-low heat, melt butter with olive oil; add garlic and continue cooking for 1 minute.

Wash chicken pieces and pat dry.

In a plate or shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, basil, salt, and pepper.

Coat chicken pieces with the garlic/oil mixture and then dip in the bread crumb mixture, turning to coat thoroughly.

Arrange chicken on the foil and bake for about 30 to 40 minutes, depending on thickness of pieces, until chicken is cooked through.
Serves 4 to 6.

"I used fresh parsley and basil, 1 and ½ tablespoon respectively, and rapeseed oil (canola oil in the US, I think) as I don't care for olive oil, and I didn't have panko crumbs but Danish bread crumbs come in several varieties including very crunchy ones. I will definitely make it again, as both my husband and I liked it.. In Denmark we can buy packages of the little strips off the breast of chicken which makes it even easier to make this as I didn't have to cut the meat. I gave the chicken about two minutes under the grill at the end of the cooking to make them crunchier."
