Crockpot Chicken Cacciatore

Ingredients:

  • 1 large onion, sliced thinly
  • 1 1/2 pounds skinless, boneless chicken breast halves
  • 2 (6 oz each) cans tomato paste
  • 8 ounces fresh sliced mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic minced
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 bay leaf
  • 1/4 cup dry white wine
  • 1/4 cup water

Preparation:

Put sliced onion in bottom of slow cooker; top with chicken breast halves. Combine and stir together remaining ingredients. Spread over chicken. Cover and cook on low 6 to 8 hours, or 3 to 4 hours on high. Serve as a sauce for hot cooked spaghetti or similar pasta.
Serves 4.

"Awesome-we used thighs instead of breasts because breasts are always dry, added more garlic(you can never have too much), and two teaspoons of sugar to take away the bitterness/ sourness the others were commenting about. We served it over linguine, serving it with freshly grated parmesan. We couldn't get enough. Better than a fancy Italian restaurant! Will make it again and again!"
