Chicken Divine

This recipe was shared on our forum by Deary. It's easy to fix with cream of chicken soup, and delicious with rice or noodles.


  • 6 boneless chicken breast halves, uncooked, without skin, cut into 1-inch cubes
  • 1 can Cream of Chicken soup
  • 1 cup mayonnaise (I use light)
  • 1/4 cup lemon juice (I use more than this gives it great flavor)
  • 1 tbsp curry powder (I use a lot more than this)
  • enough cooked white rice for the people you're feeding


If you're going to cook this in the oven, put the chicken in a 9" X 13" pan. In another bowl, mix soup, mayonnaise, lemon juice and curry powder. Pour over chicken. Cover and bake for 1 hour at 375°. Serve over rice. Some people put cheddar cheese over top (I don't). You can also add broccoli to this.

If you're going to cook this on the stove, use a large pot and cook the chicken just until white, then add rest of ingredients. Simmer for 15 minutes or so. Serve over rice. Same as above, you can put cheddar cheese on top and/or add broccoli.

This chicken was absolutely delicious!! I did a small variation. She said that she adds more lemon juice for taste so rather than add more lemon juice, I added zest from half a lemon which punches up any dish and it was perfect. And...now that I know I like curry, I put about 4x's the amount of curry powder in it, turning it into a medium orange color and again, perfection! (I don't recommend doing this unless you know you like curry) I love this dish so much, I had it for a midnight snacky and some for breakfast - cold! Yes it's that good! I am quickly becoming a fan of Diana Rattray's recipes. Thank you Diana! :)
