Chicken Bake With Buttered Noodles

A popular potluck recipe, this recipe could be lightened up somewhat with low-fat versions of many of the ingredients.

Ingredients:

  • 1/2 cup chopped dried beef
  • 8 to 12 chicken thighs, skin removed
  • 4 to 6 slices bacon
  • 1 small package (3 ounces) cream cheese, room temperature
  • 1 can (10 3/4 ounces) condensed cream of mushroom soup
  • 1 can (10 3/4 ounces) condensed cream of chicken soup
  • 1 1/2 cups sour cream
  • fresh chopped parsley
  • hot cooked noodles

Preparation:

Sprinkle dried beef into a lightly buttered 3-quart baking dish. Arrange chicken things in casserole, meaty side up. Top each chicken thigh with 1/2 slice of bacon. Combine cream cheese, soups, and sour cream; beat until well blended then pour over the chicken. Cover with foil or lid and bake at 325° for 1 1/2 to 2 hours, until chicken is tender. Uncover, sprinkle with parsley, and cook for 20 to 30 minutes longer. Serve with hot cooked noodles.
Serves 4 to 6.
