Chicken Rice Divan Bake

This chicken and broccoli recipe is made with rice and cheddar cheese and cooked cubed chicken.


  • 1 packages (10 ounces each) frozen broccoli spears
  • 1 cup grated Cheddar cheese
  • 2 cups cubed cooked chicken
  • salt and pepper
  • 1 cup cooked rice
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1 cup sour cream


Cook broccoli according to package directions; drain well. Arrange broccoli in 13x9x2-inch baking dish. Sprinkle with half the cheese; top with cubed chicken. Season with salt and pepper; spoon on the cooked rice.
In a saucepan, melt butter over low heat. Blend in flour; add milk. Cook, stirring constantly, over medium heat until mixture thickens and bubbles. Remove from heat; stir in lemon juice and fold in the sour cream. Pour over chicken. Sprinkle with remaining cheese. Bake at 400° for 15 to 20 minutes.
Serves 4 to 6.

Very yummy and healthy recipe, Member MsAmarG

I had broccoli in the fridge kicking around and some boneless skinless thicken thighs and came across this recipe. I didn't have sour cream but used Greek Style plain yogurt and it worked fantastic. Instead of plain white rice I used broccoli and cheddar rice that I had cooked from a package and it just added an extra kick. I also added a bit of garlic to the sauce. I love it when I can take an easy basic recipe like this and make variations to suit us and what we have at home already. Im always looking for ways to get my 2 and half year old to eat veggies and broccoli is a good one. It doesn't look that appetizing though in all the layers. I kind of expected it to blend more but it tastes fine.Thanks.
