This rice and chicken bake is packed with flavor, and it's easy to prepare. Use convenient cooked chicken cubes for an even easier meal.

Ingredients:

  • 1 cup long-grain rice
  • 4 boneless chicken breast halves, without skin
  • 4 tablespoons butter
  • 1/4 cup chopped red or green bell pepper, or combination green and red
  • 1 clove garlic, minced
  • 1 cup chopped onion
  • 1/2 cup chopped sliced celery
  • 1 can (14.5 ounces) tomatoes
  • 1/4 cup raisins
  • 3 tablespoons blanched sliced or slivered almonds
  • 1/2 to 3/4 teaspoon curry powder
  • 1/2 teaspoon dried leaf thyme, crumbled
  • salt and pepper
  • sliced or slivered almonds for garnish

Preparation:

Heat oven to 375°.

Cook rice with water as package directs, just until tender. Wash chicken and pat dry. Heat the butter in a large skillet; brown chicken on both sides; remove to a 2-quart casserole. Pour off excess butter and add the bell pepper, garlic, onions, celery, tomatoes, raisins, almonds, and seasonings. Simmer the mixture for 10 minutes. Spoon the rice over the chicken then pour the sauce over all. Cover with foil and bake for about 25 minutes, or until chicken is tender. Garnish with almonds, if desired.
Serves 6.

I have fixed this dish twice in five days. I initially looked it up because I was having some friends over dinner, and one of them is trying to avoid wheat and dairy products. This dish was the perfect answer. Both ladies asked me for the recipe, and one of the fellows told me how great it was and how wonderfully it tasted. Therefore, I decided to fix it for my daughter and son-in-law when my daughter got off work at the hospital last night. She had worked late, was exhausted, but she could not stop saying how delicious it was as did her husband. The recipe is supposed to feed six, but the three of us completed all of it but perhaps one serving for me to warm up for my lunch. I altered the recipe slightly. I did not have any long grain rice so I used a gourmet brown rice mix which I cooked in chicken broth. After draining the excess butter from the pan, I added all the sauce ingredients to the chicken and cooked them together. Perhaps that gave it more of a chance to blend the flavors. I also used the maximum amount of curry powder plus a little because I was afraid my curry powder was not ""young."" I told another friend about the recipe and she asked me to email it to her immediately. Thanks!
