Easy Chicken Rice Casserole with Mushrooms

This chicken and rice combination is convenient and easy. Onion soup mix and condensed soup make the dish a snap to prepare and give it nice flavor.

Cook Time: 1 hour, 30 minutes

Total Time: 1 hour, 30 minutes

Ingredients:

  • 1 cut-up frying chicken
  • 1 cup long grain white rice
  • 1 envelope onion soup mix
  • 1 can cream of chicken soup
  • 1 1/2 cans water
  • 4 ounces can sliced mushrooms
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Preparation:

Combine everything except chicken, mixing well; put into casserole. Arrange chicken on top. Cover tightly and bake at 350° F (180° C/Gas Mark 4)  for 1 hour. Uncover and bake 30 minutes more, stirring once.

 Also, you can leave the baking dish covered and bake at 325° F (165° C/Gas Mark 3)  for 1 1/2 hours.

Very easy to prepare. I added some additional seasonings for a bit more flavor. I don't think I would prepare this on a regular basis, but can see making it again. We eat a LOT of chicken, so I am always on the lookout for other options. I'd give this 3.5 stars.
