Chicken Salad With Bacon and Raisins

I roast 3 medium chicken breast halves to make this chicken salad recipe. It's a delicious salad to serve on lettuce, or use it as a filling for buns or finger sandwiches. This chicken salad makes great party sandwiches.

Feel free to omit the pine nuts in this recipe, or use coarsely chopped pecans or sunflower seeds for the extra crunch.

Prep Time: 12 minutes

Total Time: 12 minutes

Yield: Serves 4

Ingredients:

  • 2 to 2 1/2 cups cooked diced chicken
  • 2 to 3 tablespoons crumbled cooked bacon
  • 1/3 cup golden raisins
  • 1 rib celery, diced
  • 1/4 cup chopped red or sweet onion
  • 2 green onions, thinly sliced
  • 2 to 3 tablespoons pine nuts, optional
  • 1/2 to 3/4 cup mayonnaise
  • 1 teaspoon lemon juice
  • salt and pepper, to taste

Preparation:

In a medium bowl combine the chicken, bacon, raisins, celery, onion and green onion, and pine nuts, if using.

Mix in about 1/2 cup of the mayonnaise and the lemon juice until well mixed. Taste and add more mayonnaise and the salt and pepper, as needed.

This chicken salad recipe serves 4.
