Chicken Salad with Pineapple

Ingredients:

  • 3 cups cooked chicken, diced
  • 1 1/2 cups chopped celery
  • 1/2 cup crushed pineapple, drained
  • mayonnaise
  • salt and pepper to taste
  • lettuce
  • 2 hard-cooked eggs, sliced, optional

Preparation:

Combine chicken, celery and pineapple; moisten with mayonnaise. Season with salt and pepper, to taste. Serve on lettuce and garnish with sliced egg, if desired.
Serves 8

"This is my favorite chicken salad recipe of all time! My family has been making this for as long as I can remember. Tender chicken (I bake the chicken breasts with s/p and cool slightly before shredding), along with the crunchy celery, combined with the sweetness of the pineapple...and smooth Hellmann's mayo. Simplistic Yum. Add the salt to your liking... it needs salt."
