Ingredients:
- 2 cup finely chopped cooked chicken
- 1/3 cup golden raisins (I used regular, didn't have golden)
- 1/4 cup slivered almonds, toasted
- 1/4 cup diced celery
- 1/4 cup mayonnaise
- 1/4 cup fat free plain yogurt
- Monterey Jack Cheese cut in slices
- 12 whole wheat bread slices
- Margarine (she had Brummel and Brown, I used butter)
Preparation:
Stir together first 6 ingredients. Butter 1 side of each pieces of bread. Place buttered side of bread down on skillet, place cheese slices on bread to cover, spread chicken mixture evenly over cheese, and top with remaining bread slices. Cook sandwiches in skillet or griddle (or probably the Foreman Grill) over medium heat about 3 minutes on each side or until lightly browned.Chicken sandwich was shared by Amy8885
