Serve this easy chicken soup with a sandwich or salad for a tasty lunch or supper.
Ingredients:
- 2 cups water
- 1 envelope chicken noodle soup mix
- 1/4 cup long-grain rice
- 1 to 2 tablespoons finely chopped onion
- 2 cups milk
- 1 small (8 ounces) can cream-style corn
- 1 cup cubed cooked chicken, or 1 (5 ounces) can white meat chicken
Preparation:
In a medium saucepan, bring water to a boil; add chicken noodle soup mix,
rice, and chopped onion. Reduce heat; cover and simmer until noodles and rice are tender, about 20 to 25 minutes. Add milk, cream-style corn, and the chicken; heat through.
