The name "Forgotten Cookies" comes from leaving these cookies to bake in the oven overnight after it's been turned off.

Ingredients:

  • 2 egg whites, at room temperature
  • 2/3 cup sugar
  • pinch salt
  • 1 teaspoon vanilla
  • 1 cup finely chopped pecans
  • 1 cup chocolate chips

Preparation:

Preheat oven to 350°. Beat egg whites until foamy. Gradually add sugar and continue beating until they hold stiff peaks. Add salt and vanilla. Stir well. Stir in pecans and chocolate chips. Cover cookie sheet with foil and grease with butter or margarine. Drop by teaspoonfuls onto the foil. Put in oven then turn the oven off. Leave overnight in oven with door closed.

My mom's friend gave me this recipe in the early 70's. I always make them for Christmas cookie trays. I always divide the batch (or make a double batch) and dye one batch green and one batch red (mine are actually more pink than red and light green). We've never put nuts in them - but otherwise, it is the same recipe. I use a sil-pat instead of preparing the cookie sheet. They always release very easily. These cookies are on every tray of Christmas cookies I've ever made...my kids and my grandkids love them!
