Mocha Mayonnaise Cake

A tasty cake recipe with mocha flavors and mayonnaise in place of the eggs and fat.

Ingredients:

  • 2 cups sifted all-purpose flour
  • 1 1/4 cups sugar
  • 1/3 cup unsweetened cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brewed strong black coffee
  • 3/4 cup mayonnaise
  • 1 teaspoon vanilla

Preparation:

Heat oven to 350°. Grease and flour a 9-inch square pan.

Sift together flour, sugar, cocoa, baking powder, soda, and salt. Add the coffee, mayonnaise, and vanilla. Stir until smooth and well blended. Pour batter into prepared pan and bake for 40 minutes, or until cake springs back when lightly touched with finger and begins to leave sides of pan. Remove from oven and cool in pan. If desired, turn cake out onto rack after 10 minutes, or it may be served from the pan. Dust with confectioners' sugar before serving or serve with whipped topping.
