- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 can (1 1/3 cups) coconut
- 1 egg
- candied cherries, red and green
Preparation:
Measure flour, sugar, butter, and coconut into a large mixing bowl. Add egg. With a hand-held electric mixer, mix at low speed until blended. Scrape bowl occasionally. On a lightly floured surface with floured rolling pin, roll out about 1/3 of the dough about 1/4-inch thick. With a doughnut cutter, cut out rings. Preheat oven to 375°. Grease a large baking sheet. Place rings about 1 inch apart on baking sheet. Cut candied cherries into small pieces which resemble flower petals or other shapes, then arrange on rings to resemble flowers or ornaments. Bake cookies for 10 minutes at 375°, or until golden brown. Remove cookies to wire racks to cool. Repeat cutting and baking with remaining dough. Store in covered container for up to 1 week.Makes about 2 dozen cookies.
