Chocolate Madeleines

These spongy cake-like cookies are made with high quality cocoa in a silicone madeleine pan.

Ingredients:

  • 4 ounces butter, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup flour
  • 1/2 cup good quality cocoa
  • 1/2 teaspoon baking powder
  • dash salt

Preparation:

Heat oven to 375°. Butter Madeleine pan or spray with nonstick baking spray.

In a mixing bowl cream butter and sugar until light and fluffy; beat in eggs, one at a time. In another bowl, combine the flour, cocoa, baking powder and salt; stir into the creamed mixture until well blended. Drop batter by rounded teaspoonful into prepared pan. Bake the cookies for about 10 to 12 minutes, or until a Madeleine springs back when lightly touched with finger. Place pan on rack to cool for 15 minutes. Remove cookies from pan to rack to cool completely.
Makes about 24 cookies.
