Ingredients:
- 1 graham cracker crust, 9-inch, purchased or homemade
- 2/3 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups whole milk
- 5 ounces dark or bittersweet baking chocolate, cut in small pieces
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon butter
- 1 1/2 cups miniature marshmallows
- 1 cup whipping cream
- 3 tablespoons powdered sugar
- coarsely crumbled graham cracker
Preparation:
Whip the cream with the 3 tablespoons of powdered sugar until soft peaks form.
Fold about half of the whipped cream into the cooled pudding, then fold in the miniature marshmallows. Spoon into the prepared pie shell. Spoon remaining whipped cream in a circle about 1/2-inch from the outer edge of the pie. Sprinkle the whipped cream with crumbled graham cracker.
Cover and chill thoroughly.
