Corn Flake Macaroons

Corn flake cookies are easy to make, with corn flakes cereal, coconut, sugar, flavorings, and egg whites.

Ingredients:

• 1 egg white
• 1/2 cup sugar
• 1/2 cup shredded coconut
• 1 cup corn flakes
• 1/4 teaspoon almond extract
• 1/4 teaspoon vanilla extract
• pinch salt

Preparation:

Lightly grease a baking sheet, line with silicone sheet, or spray with nonstick cooking spray. Heat oven to 325°.

Beat egg white until stiff peaks form.

Add remaining ingredients and stir to blend. Drop by teaspoonfuls on baking sheet; bake about 20 minutes, until set.
Makes 18.
