Holiday Brunch Souffle

Ingredients:

  • 10 slices bacon, diced
  • 6 slices bread, lightly buttered
  • 6 eggs, slightly beaten
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon ground paprika

Preparation:

Cook bacon until browned; drain on paper towels. Cut bread into small pieces. In a lightly buttered deep casserole (2-quart size), make layers of bread pieces and bacon. Whisk together the eggs, milk, salt, mustard, and paprika; pour over bread and bacon. Bake at 350° for about 40 to 50 minutes, or until puffy and a knife inserted in center comes out clean.
Serves 4.
