Chocolate Thumbprint Cookie Recipe

Ingredients:

  • 1/2 cup butter, room temperature
  • 2/3 cup granulated sugar
  • 1 egg, separated
  • 2 tablespoons milk
  • 1 teaspoons vanilla
  • 1 cup all purpose flour
  • 1/3 cup unsweetened cocoa
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans or walnuts

  • 1/2 cup confectioners sugar
  • 1 tablespoon butter(softened)
  • 2 teaspoons milk
  • 1/4 teaspoon vanilla
  • drop or two of red food coloring
  • 24 milk chocolate kisses, unwrapped

Preparation:

In a large mixing bowl, cream 1/2 cup butter, granulated sugar, egg yolk, milk and vanilla until light and fluffy.

Combine flour, cocoa and salt in a separate bowl; gradually add to creamed mixture, stirring until well blended. Cover and chill cookie dough for one hour, or until firm enough to shape into balls.

Whisk egg yolk in a small bowl until frothy. Shape chilled dough into 1-inch balls, dip in egg white, then roll in the finely chopped nuts. With thumb, make an indentation in center of of each cookie. Bake at 350° for 10 to 12 minutes, or until center is just set. For filling, combine 1/2 cup confectioners' sugar, 1 tablespoon butter, 2 teaspoons milk, and 1/4 teaspoon vanilla in a bowl; mix until smooth. Mix in food coloring, if using. Spoon about 1/4 teaspoon of filling into each warm cookie indentation, then gently press a chocolate kiss in the center. Carefully remove chocolate thumbprint cookies from baking sheet to wire racks to cool. Makes about 2 dozen cookies.
