Cornflake Christmas Cookies

Ingredients:

  • 2 egg whites
  • 1/8 teaspoon salt
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups corn flakes
  • 1 cup flaked coconut
  • 1/2 cup chopped green and red candied cherries or chopped pecans, optional

Preparation:

In a mixing bowl, beat egg whites with salt until stiff. Add sugar, a little at a time, beating constantly; beat in vanilla. Fold in corn flakes, coconut, and chopped nuts or candied cherries. Drop by teaspoonfuls onto lightly greased baking sheets. Bake at 300° for 12 to 15 minutes. Cool for 1 minute; remove with spatula. Makes about 3 dozen corn flake cookies.
