Ingredients:
- 1 cup butter
- 1 1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups quick-cooking oats
- 1 cup raisins
- 1 cup fresh or frozen cranberries, coarsely chopped
- 1 cup white chocolate chips
- 1 tablespoon orange peel, finely shredded
Preparation:
Beat butter in a large mixing bowl for until light. Beat in sugar, eggs, and vanilla. Beat until combined. Stir together flour, baking powder, baking soda, and salt. Slowly beat in half of the flour mixture. Stir in remaining flour mixture, oats, raisins, cranberries, white chocolate chips, and orange peel. Drop by rounded teaspoons onto a greased baking sheet. Bake in a 375° oven for 10 to 12 minutes, or until edges are lightly browned. Makes about 5 to 6 dozen cookies.
