Swedish Christmas Cookies


Swedish butter cookie recipe with chopped almonds and almond extract.


  • 1 cup butter, room temperature
  • 2 egg yolks
  • dash salt
  • 3/4 cup sugar
  • 1 teaspoon almond extract
  • 2 1/2 to 2 3/4 cups flour
  • 1 egg white, slightly beaten
  • 4 tablespoon finely chopped almonds
  • 2 tablespoons sugar


Cream butter and sugar until light and fluffy. Beat in egg yolks and almond extract. Add salt. Sift in flour and mix well, making it a stiff but pliable dough. Chill for at least 1 hour. To shape, divide dough into 6 equal portions. Roll out each portion to make a rope, about 24 inches in length. Cut each into 2 to 3-inch logs. Place on lightly greased cookie sheets or baking sheets lined with nonstick mats. Brush cookies with egg whites and sprinkle with sugar and almonds. Bake at 375° for about 10 minutes, or until cookies are firm and lightly browned around edges. Let cool on cookie sheet for a few minutes then remove to a wire rack to cool completely.
Makes 4 to 6 dozen.
