Swedish butter cookie recipe with chopped almonds and almond extract.
Ingredients:
- 1 cup butter, room temperature
- 2 egg yolks
- dash salt
- 3/4 cup sugar
- 1 teaspoon almond extract
- 2 1/2 to 2 3/4 cups flour
- 1 egg white, slightly beaten
- 4 tablespoon finely chopped almonds
- 2 tablespoons sugar
Preparation:
Cream butter and sugar until light and fluffy. Beat in egg yolks
and almond extract. Add salt. Sift in flour and mix well, making it a stiff but pliable dough. Chill for at least 1 hour. To shape, divide dough into 6
equal portions. Roll out each portion to make a rope, about 24 inches in length. Cut each into 2 to 3-inch logs. Place on lightly greased cookie sheets or baking sheets lined with nonstick mats. Brush cookies
with egg whites and sprinkle with sugar and almonds. Bake at 375° for about 10 minutes, or until cookies are firm and lightly browned around edges. Let cool on cookie sheet for a few
minutes then remove to a wire rack to cool completely.
