- 2 eggs
- 1 cup milk
- 1 cup all-purpose flour, sifted
- 1/4 teaspoon salt
In a small mixing bowl, whisk eggs with milk; add flour and salt. Beat the mixture for about 2 minutes. Carefully pour the batter into the very hot greased custard cups, filling about 2/3 full. Bake at 425° for 35 to 45 minutes. Serve immediately. Makes 6 large popovers.
Cheese popover recipe variation: For cheese popovers, sprinkle with shredded sharp Cheddar cheese or gruyere just before baking.
