Cook Time: 20 minutes
Ingredients:
- 2 cups sifted all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup sugar
- 1 egg, beaten
- 1 cup milk
- 1/3 cup vegetable oil
- 1/2 cup chopped pecans

- Topping:
- 1/4 cup sugar
- 1 teaspoon finely grated orange zest
- 1/4 cup melted butter
Preparation:
Sift together flour, baking powder, salt, and 1/4 cup sugar. Combine egg, milk, and oil. Add liquid all at once to flour mixture and stir until all flour is moistened. Stir in chopped pecans. Fill oiled muffin cups 2/3 full. Bake at 425° for 15 to 20 minutes, or until tops are lightly browned. Meanwhile, blend 1/4 cup sugar with orange zest. When muffins are done, remove from muffin cups right away and dip tops in melted butter then into orange sugar mixture. Serve warm.Makes 12 medium muffins.
