Easy Coconut Macaroons

Easy coconut macaroons are made with 3 ingredients.

Cook Time: 8 minutes

Ingredients:

  • 16 ounces shredded coconut
  • 1 can (14-15 ounces) sweetened condensed milk
  • 2 teaspoons vanilla extract

Preparation:

Directions for coconut macaroons
Mix all ingredients together. Drop by teaspoonfuls onto generously greased baking sheets. Bake at 350° for 8 minutes. Cool coconut macaroons slightly; remove to rack. Makes about 4 to 5 dozen coconut macaroons.

"I can't tell from the recipe whether it calls for 16 ounces of coconut liquid measurement (as in 2 cups) or 16 ounces weight measurement (as in one pound.) When you purchase bags of coconut, it's by servings in tablespoons; when you purchase it from a natural food store, it's by weight. Why not just put the recipe one way or the other? Or, as I suggested, go to the metric system?"
