Cook Time: 12 minutes
Ingredients:
- 1/2 cup butter or margarine
- 1/2 cup granulated sugar
- 1/2 cup firmly packed dark brown sugar
- 1 egg
- 1 tablespoon molasses
- 1 teaspoon grated lemon rind
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baling soda
- 3/4 cup corn flake crumbs
- 1 to 2 tablespoons wheat germ
- 3/4 cup flaked coconut
Preparation:
Into a separate bowl, sift together flour, baking powder, and soda; stir into egg mixture until blended; stir in corn flake crumbs, wheat germ, and coconut. Drop by level teaspoons about 2 inches apart, onto ungreased baking sheets. Bake in at 375° 10-12 minutes until lightly browned. Let stand on baking sheets for about 30 seconds, until cookies start to become crisp, then remove carefully. Cool and store in an airtight container.
Makes about 8 to 9 dozen coconut cookies.
