Coconut Corn Flake Cookies

These chewy corn flake cookies are similar to coconut macaroons. They're quick and easy to make up, with corn flakes and coconut, along with nuts and egg whites. The nuts are optional, if you want a little extra crunch.

Ingredients:

  • 2 egg whites
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups corn flakes
  • 1 cup flaked coconut
  • 1/2 cup chopped nuts, optional

Preparation:

In a mixing bowl, beat egg whites with salt until stiff. Add sugar, a little at a time, beating constantly; beat in vanilla. Fold in corn flakes, coconut, and chopped nuts.

Drop by teaspoonfuls onto lightly greased baking sheets. Bake at 300° F (150° C/Gas 2)  for 15 to 20 minutes, until just crisp . Cool for 10 to 15 minutes; remove with spatula.

Makes about 3 dozen cookies.
