Easy Coconut Custard Pie

Cook Time: 40 minutes

Ingredients:

  • 4 eggs
  • 2 cups sweet milk
  • 3/4 cup sugar
  • 1/2 cup flour
  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • 1 cup sweetened coconut flakes

Preparation:

Put all ingredients into a large mixing bowl. Beat well with a hand held mixer on high speed. Pour into a greased 10-inch pie plate. Bake at 350 degrees for 40 minutes.

"Very easy and very good. I substituted Splenda for the sugar. Excellent flavor and texture. The crust settles on the bottom and the custard rises to top. This recipe is a definite keeper in my recipe file."
