Cornbread Coffee Cake

A cornbread coffee cake made with cornmeal and sugar and strawberry preserves.

Cook Time: 25 minutes

Ingredients:

  • 1 cup sifted all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cornmeal
  • 1 egg
  • 1 cup milk
  • 3 tablespoons cooking oil
  • 1/2 cup strawberry preserves, or favorite
  • 1 tablespoon sugar

Preparation:

In mixing bowl, sift together flour, the 2 tablespoons sugar, baking powder, and salt; stir in cornmeal.

Blend egg, milk, and oil; add to dry ingredients. Beat just until smooth. Spread batter in greased 9-inch pie plate; spoon preserves over batter. Sprinkle with the remaining sugar. Bake in 425° oven for 20 to 25 minutes.
