This coffee cake is filled and topped with an apple pecan and brown sugar streusel mixture.

Cook Time: 50 minutes

Total Time: 50 minutes

  • Streusel:
  • 1 cup light brown sugar, packed
  • 1 cup chopped apples
  • 1 cup chopped pecans
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 tablespoons melted butter
  • .
  • Cake:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 ounces (1/2 cup) butter, softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/3 cup orange juice
  • .
  • Glaze:
  • 1/2 cup confectioners' sugar
  • 2 1/2 teaspoons orange juice

In a medium bowl, combine streusel ingredients. Blend together well.

In another medium bowl, combine flour, baking powder, baking soda and salt; mix well. In a large mixing bowl, cream butter and granulated sugar with a hand held electric mixer on medium speed until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in the vanilla. With mixer at low speed, beat flour mixture into creamed mixture alternately with orange juice.

Spoon half of the batter into a greased and floured tube pan. Sprinkle half of the streusel mixture over batter. Spoon remaining batter over streusel. Draw a butter knife or narrow spatula gently through batter to swirl a bit. Bake at 350° for 15 minutes. Top with remaining streusel then return to the oven to bake 30 to 35 minutes longer, or until a wooden pick or cake tester inserted in center comes out clean. Transfer cake to a wire rack to cool completely.

Turn cake out of pan. Combine confectioners' sugar and orange juice. Mix well, adding more orange juice or confectioners' sugar if necessary for consistency. Drizzle glaze over cake.

Apple Streusel Coffee Cake, Member ChristineMontreal

Good recipe, however batter is very heavy and cake turned out rather dense. The second time I made it, I added 1/2 cup sour cream and grated rind of an orange. Would recommend doubling the streusel especially for the middle layer. Didn't have enough apples so threw in cranberries and it was amazing. For those who are adventurous...try adding either Triple Sec or Gran Marnier to the batter and the glaze..
