Collards with Okra

Ingredients:

  • collard greens
  • salt pork
  • okra
  • chopped onion, or minced or powder, to taste
  • Cajun seasoning or seasoned salt, to taste
  • salt, as needed

Preparation:

Wash the collards and cut them up into narrow strips (Roll a bunch together and slice crosswise). Put them, along with a good size piece of salt pork that has been cut up, in a large cast iron or heavy pot with enough water to just cover. Add some sliced okra, frozen or fresh. Bring to a boil, turn down heat to low and cook about an hour. Add seasoning to taste. I use a little cajun seasoning, salt if needed, onion (chopped fresh, minced dried, or powder), and cook another half hour or til done to suit your taste. You can also cook this in a crockpot.
