Pumpkin Cookies with Walnuts or Pecans

Ingredients:

  • 1/2 cup butter, room temperature
  • 1 1/2 cups brown sugar, packed
  • 2 large eggs
  • 1 cup mashed or canned pumpkin
  • 1 teaspoon vanilla extract
  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 1/2 cups chopped walnuts or pecans
  • 2 teaspoons pumpkin pie spice

Preparation:

Preheat oven to 375° F.

In a large mixing bowl, beat butter and sugar together until light and fluffy. Beat in eggs, one at a time; stir in pumpkin and vanilla extract. In a separate bowl, combine flour, baking powder and spices; stir to blend.

Add dry ingredients to butter and sugar mixture; stir well. Stir in chopped nuts. Drop by rounded teaspoonfuls about 1-inch apart onto greased baking sheets. Bake in upper half of oven for about 12-14 minutes. Remove pumpkin cookies to wire racks to cool.
Makes about 3 dozen cookies.

Not the greatest cookies, but makes awesome bread!, Member lilhomemaker

I followed the recipe to a tee- opting for chopped pecans instead of walnuts and wasn't too inpressed with the cookies. They were flakey, pale, and the flavor was very subtle. I had given up after the first batch and decided to let the dough sit covered in the fridge for about an hour debating how to improve them. Since the dough had cooled off in the fridge, it was now easier to work with (thank goodness!). I dropped the rest of it into a six mini-loaf pan (roughly 3x5 inch loaf pan), covered the tops with butter, brown sugar, and the pumpkin spice. Baked in the oven at 375 for about 7 minutes or so and then dropped the temperature to 325 to bake it thoroughly.... The result was astounding! My husband and our roomate absolutely loved them! All six were gone in about a day. I definetely plan on using this recipe again for my new pumpkin bread discovery.
