Cinnamon Cookies

Cinnamon cookies with walnuts or pecans.

Cook Time: 15 minutes

Ingredients:

  • 3/4 cup butter, room temperature
  • 1 cup dark brown sugar, packed
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon soda
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts
  • 1/3 cup sugar

Preparation:

Directions for cinnamon cookies
In a large mixing bowl, cream butter and dark brown sugar until light and fluffy; beat in egg. Combine flour, soda, ginger, cinnamon, and salt; add to the creamed butter mixture and mix well. Stir in vanilla and chopped pecans or walnuts. Chill for about 3 to 4 hours in the refrigerator, or overnight. Shape dough into 1-inch balls; dip in sugar. Place on greased cookie sheets about 2 inches apart. Press each cinnamon cookie to flatten with a fork. Bake at 350° for 15 to 18 minutes. Let cinnamon cookies cool for 2 minutes on the baking sheet then remove.
Makes about 3 1/2 dozen cinnamon cookies.
