Easy Lemon Cookies

These easy lemon cookies are made with pudding mix.

Ingredients:

  • 2 cups all-purpose flour, sifted or stirred before measuring
  • 3/4 teaspoon baking soda
  • pinch salt
  • 3/4 cup shortening
  • 1 cup sugar
  • 2 packages (3 3/4 ounces each) lemon instant pudding mix
  • 3 eggs lightly beaten

Preparation:

Sift flour with baking soda and salt Cream shortening until light; add sugar and pudding mix, beating until light and fluffy. Add eggs; mix well to blend. Add flour mixture; beat well until blended. Drop by teaspoonfuls onto greased baking sheets about 2 inches apart. Bake at 375° for 8 to 10 minutes. Makes about 5 to 6 dozen lemon cookies.

"These cookies would be great for a summer wedding shower or baby shower! They're very light and refreshing. I added 1 teasp. vanilla and they came out even better! Add fresh blueberries for some color! Great with lemon or butter cream frosting."
