Simple meringue cookies are made with a little lemon juice and slivered almonds.
These are also known as Suspiros, Spanish for sighs.

- 3 egg whites
- 1 cup sugar
- 1/2 teaspoon lemon juice
- 1/2 cup slivered blanched almonds
Beat egg whites until stiff. Add sugar gradually, while continuing to beat, until sugar is incorporated and dissolved. Add lemon juice then fold in almonds.
Line a baking sheet with parchment paper or foil. Drop meringue mixture by teaspoonfuls onto the prepared baking sheet.
Bake at 350° for about 12 minute, until lightly browned.
Makes about 36 to 48 cookies.
